Nokake (Native American corn cakes)

2 ½ c. masa (corn meal)
2 c. water
pinch of salt
onion powder (optional, to taste)
paprika (optional, to taste)
pinch of sugar
vegetable oil

Combine masa, water, sugar, salt, and spices/seasonings in a bowl and mix thoroughly.  Add water and blend into a smooth batter.  Drop mixture onto a hot griddle or skillet coated with vegetable oil, in a size of your choosing.  *They cook more evenly and faster if they’re not too thick.  Cook until golden brown and serve.
